Dark Chocolate Mudcake

I am always surprised as to the popularity of this recipe.  I have demonstrated it many times on TV, published the recipe on Facebook, and it was also published in my cake book, ‘La Torta Perfetta di Toni’.  When I used to make wedding cakes, this recipe was also the most requested by brides and grooms.  It is only fitting that I publish it here and although I have 3 different recipes written down for a dark chocolate mudcake, I am writing here the recipe that I use 98% of the time, and the one recipe that I know off by heart!

INGREDIENTS

  • 150g Dark Chocolate (A)
  • 400g Sugar (B)
  • 250g Butter (C)
  • 250ml Milk (D)
  • 100g Plain Flour (E)
  • 100g Self Raising Flour (F)
  • 100g Cocoa (G)
  • 2 Large Eggs (or 3 small)

METHOD

  1. Melt A, B, C & D in a heavy saucepan, stirring well. Do not boil. *Add melted chocolate mixture to mixer bowl.
  2. Add sifted E, F & G and when combined add Eggs one at a time.
  3. Pour cake mixture into a lined cake tin. Bake for at least an hour at 160°C until a skewer poked in the middle comes out clean. EVERY oven is different and this dose can sometimes take more than an hour in the oven. I always double this recipe for diam 22cm -24cm diam cake tins… but I only increase the butter amount 1.5 and not doubled.
  4. If you are not using this cake for a cake decorating project…. it is delicious served warm with vanilla ice-cream. This is also a great way to eat the top ‘scraps’ that you have cut off IF you are using the cake for a cake decorating project.

RICETTA IN ITALIANO                    MUDCAKE AL CIOCCOLATO FONDENTE

  • 150g di cioccolato fondente
  • 400g di zucchero
  • 250ml di latte intero
  • 250g burro + 1 noce per la tortiera
  • 100g farina ‘00’
  • 100g di farina autolievitante
  • 100g cacao amaro
  • 2 uova grandi (o 3 piccoli)
  1. Mettete il burro, il cioccolato, lo zucchero e il latte in una pentola antiaderente, e fate sciogliere a fuoco lento, senza far bollire. (Lasciate raffreddare per 10 minuti).
  2. Spennellate la tortiera con la noce di burro ammorbidita e rivestitela con la carta da forno.
  3. Versate il cioccolato fuso nel mixer, aggiungete il cacao, le farine setacciate e le uova, una alla volta.   Ponete l’impasto nella tortiera e mettete in forno già caldo a 160°C per circa un ora. (Lo stampo qui ha un diametro di 16cm).
  4. La torta può richiedere un tempo di cottura più lungo di un ora.  Se la superficie sta cuocendo troppo velocemente (è il centro e ancora crudo) mettere un pezzo di carta alluminio sopra per assicurarsi che la torta continui a cuocere uniformamente.
  5. Togliere la torta dal forno quando, dopo aver inserito lo stecchino esce pulito e asciutto.

** Per un stampo di diam 22cm o 24cm io raddoppio sempre questa ricetta. Stare attenta di foderare bene il stampo con la carta da forno superando il bordo dello stampo. Suggerisco anche di mettere 375g di burro nella ricetta raddoppiata, e non 500g. (Cioè x 1.5).

Potete anche fare la torta a diametro 22cm con questi dosi… Ma la torta non sarà molto alta. Credo che è importante di farlo almeno una volta però per capire come viene la torta nel vostro forno… (Visto che ogni forno é diverso).  Guarda in basso alle due foto per illustrare che intendo quando spiego come si fodera lo stampo.
