Lemon Cake

Lemon Cake is one of those recipes that I remember fondly from my mother’s classic cake repertoire that she’d have waiting for us after school for our afternoon tea. The lemon glaze on the bottom of the cake balances the tart lemon icing on top.  This recipe will actually make two cakes.  The bundt tin I used is a 6 cup capacity  Nordic Ware cake tin, but you could make two loaf cakes if you prefer.  If you don’t have buttermilk, substitute it by adding 3/4 tablespoon of white vinegar to your milk. I think that this cake is actually better the day after it is baked.

While lemon icing is the classic frosting for this cake, I also used my passionfruit curd which pairs perfectly –  actually one might even say it’s a marriage made in heaven!

Lemon Cake

Ingredients

  • 230g butter
  • 400g sugar
  • 380g plain flour
  • 4 large eggs
  • 50ml lemon juice
  • 1/3 cup lemon zest (30g)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 175 buttermilk
  • 1 teaspoon vanilla Extract

lemon glaze

  • 100g sugar
  • 125ml lemon juice

lemon icing

  • 240g (2 cups) icing sugar
  • Juice of a lemon + finely grated zest

Method

  1. Preheat oven to 180°C.
  2. Beat together the butter and sugar using an electric mixer until light and fluffy, about 5 minutes.
  3. Add the eggs, one at a time and beat well after each addition
  4. For the lemon zest, use a potato peeler to gently peel 2 medium lemons. Add the peel to a mini food processor, and it should be about 1/3 cup.  (Add 1 tablespoon of sugar which helps it grate finely).  Add the lemon zest the butter, sugar & eggs.
  5. Sift together the flour, baking powder, baking soda and salt into a bowl.
  6. In another bowl, combine the lemon juice, buttermilk and vanilla.
  7. Add flour and buttermilk mixtures to the cake batter.
  8. Divide batter evenly between two loaf tins or cake pans, smoothing the tops.
  9. Bake for 45 minutes 1 hour, until an inserted skewer comes out clean. (mine were ready in 45min)
  10. Allow the cakes to cool for 10 minutes.
  11. Meanwhile prepare the lemon glaze.  Combine the granulated sugar and lemon juice in a small saucepan, cooking over low heat until the sugar dissolves, and it reduces a little.
  12. Remove cakes from pans and set on wire rack over a plate or pan.   I returned my cakes to the bundt tin to apply the glaze to the base of the cake so as to not damage the pattern on the top of the cake from the tin…. I allowed the glaze/syrup to soak in for about 10 minutes and then turned cakes out to cool completely on a wire cake rack.
  13. Brush some extra glaze on top of cakes, and allow cakes to cool completely.
  14. Mix sifted icing sugar with lemon juice and lemon zest. and pour over cake.  If you want your icing thicker, just add extra icing sugar until you are happy with the consistency.

Torta di Limone

La torta al limone è una di quelle ricette che ricordo con affetto dal classico repertorio di dolci di mia madre che ci cucinava dopo la scuola per la nostra merenda. Il sciroppo di limone che resta sul fondo della torta bilancia la glassa di limone in cima.  Le dosi di questa ricetta in realtà basteranno per due torte. Il stampo Nordic Ware che ho usato ha una capacità di circa 1300ml, e poi per l’impasto rimanente ho usato una teglia di circa 20cm in diametro. 

*Se non hai il latticello, sostituiscilo aggiungendo 3/4 cucchiai di aceto bianco al tuo latte.

Mentre la glassa al limone è la glassa classica per questa torta, ho anche usato la mia passionfruit curd che si accoppia perfettamente – in realtà si potrebbe anche dire che è un matrimonio fatto in paradiso!

ingredienti

  • 230 g di burro
  • 400 g di zucchero
  • 380 g di farina ’00’
  • 4 uova grandi
  • 50ml Succo di limone
  • 30g di scorza di limone
  • 1/2 cucchiaino di lievito in polvere
  • 1/2 cucchiaino di bicarbonato di sodio
  • 1 cucchiaino di sale
  • 175 latticello
  • 1 cucchiaino di estratto di vaniglia

sciroppo di limone

  • 100g zucchero
  • 125ml succo di limone

glassa di limone

  • 240g zucchero a velo
  • succo + scorza di 1 limone

Metodo

  1. Preriscaldare il forno a 180°C.
  2. Con l’aiuto di una planetaria, sbattere insieme lo zucchero e il burro fino a quando non è omogeneo e pallido, circa 5 minuti.
  3. Aggiungere le uova, una alla volta e sbattere bene dopo ogni aggiunta
  4. Per la scorza di limone, utilizzare un pelapatate per sbucciare delicatamente 2 limoni medi. Aggiungi la buccia a un mini robot da cucina. (Aggiungere 1 cucchiaio di zucchero che aiuta a grattugiarla finemente).  Aggiungere la scorza di limone al burro, zucchero e uova.
  5. Setacciare la farina, il lievito, il bicarbonato e il sale in una ciotola.
  6. In un’altra ciotola, unire il succo di limone, il latticello e la vaniglia.
  7. Aggiungere le miscele di farina e latticello alla miscela di uova, zucchero e uova, mescolare bene per ottenere un impasto liscio e omogeneo.
  8. Dividere l’impasto in modo uniforme tra due teglie precedentemente imburrate e infarinate.
  9. Cuocere per 45 minuti – 1 ora, finché un spiedino inserito non esce pulito. (i miei erano pronti in 45 minuti)
    Lasciare raffreddare le torte per 10 minuti.
  10. Nel frattempo preparare il sciroppo di limone. Unire lo zucchero semolato e il succo di limone in una piccola pentola, cuocere a fuoco basso finché lo zucchero non si scioglie e si riduce un pochino.
  11. Togliere le torte dalle stampi e metterle su una griglia sopra un piatto. Ho riposto le mie torte nele teglie per applicare il sciroppo alla base della torta in modo da non danneggiare la parte superiore della torta. Ho permesso che la glassa / sciroppo si impregnasse per circa 10 minuti e poi ho sformato le torte per raffreddare completamente su una griglia.
  12. Spennellare il sciroppo anche sopra le torte e lasciare che le torte si raffreddino completamente.
  13. Per la glassa, mescolare lo zucchero a velo setacciato con il succo di limone e scorza di limone. Versarla sopra la torta. Se vuoi la tua glassa più densa, aggiungi dello zucchero a velo in più fino a quando non sei soddisfatto della consistenza.
