This is a recipe taken from The Australian Women’s Weekly cookbooks, and I do believe it’s the recipe my mother would use every Christmas. I have added pistachio nuts to it too.
Almond Bread
- 3 egg whites
- 120g caster sugar
- 135g all-purpose flour, sifted
- 150g whole almonds
- 50g pistachio nuts
- Preheat oven to 180°C.
- Grease a 10cm x 20cm loaf pan.
- Beat egg whites in a bowl with an electric mixer until soft peaks form. Gradually add the caster sugar, beating until dissolved.
- Fold the flour, almond and pistachio nuts into the egg white mixture.
- Spread mixture into loaf pan, and bake for 30 minutes.
- Remove from oven and allow bread to cool in the pan. Remove bread from pan, wrap in kitchen foil and let stand overnight.
- Preheat oven to 150°C. Using a sharp serrated knife, cut the bread into wafer-thin slices.
- Place slices in a single layer on ungreased oven trays. Bake 30 minutes or until they are dry and crisp. Keep an close eye on them to avoid them getting too dark or burning.

Almond Bread
Mia madre preparava questa ricetta ogni Natale, ho ricordo con dolcezza i vasi pieni di questi biscotti durante le feste natalizie.
- 3 albumi
- 120 g di zucchero semolato
- 135 g di farina ’00’, setacciata
- 150 g di mandorle intere
- 50 g di pistacchi
- Preriscaldare il forno a 180°C.
- Ungere un stampo per torte di 10cm x 20cm.
- Con la frusta elettrica, montare gli albumi a neve e aggiungere gradualmente lo zucchero semolato.
- Aggiungere a mano la farina, le mandorle e i pistacchi nella miscela degli albumi.
- Distribuire l’impasto nella teglia e cuocere per 30 minuti.
- Togliere dal forno e lasciare raffreddare il pane nella teglia.
- Togliere il pane, avvolgerlo con l’alluminio e lasciare riposare per una notte.
- Preriscaldare il forno a 150°C. Tagliare il pane a fette sottilissime utilizzando un coltello seghettato affilato.
- Posizionare le fette in un unico strato su un vassoio da forno. Cuocere per 30 minuti o finché non sono asciutti e croccanti. Tenere d’occhio la cottura per evitare che diventino troppo scuri o brucino.

is the oven temperature fan forced?
I never used fan forced oven when baking. If so, you would need to lower the temperature a little.
