Finally the weather is demonstrating Autumnal tempertures, not that I had much patience to wait to start with the pumpkin recipes. I had originally planned on making muffins, and although they were delicious (especially still warm from the oven) , the following morning they looked just a little boring, naked and a touch too healthy so I decided to perfect them by decorating the tops with a little swirl of brown sugar cream cheese frosting and an extra walnut. The combination was a perfect marriage of complimenting flavours. This is definitely a recipe to re-make again and again! …………… and again!

Pumpkin Spice Muffins with Brown Sugar Cream Cheese Frosting

Makes 16

INGREDIENTI MUFFIN

• 210g plain flour
• 1 teaspoon baking powder – Mamì
• ½ teaspoon baking soda
• 90g dessicated coconut
• ¼ teaspoon salt
• 2 teaspoons 5 spice or allspice (in USA you can use pumpkin spice)
  
• 1 teaspoon cinnamon – Mamì
  
• ½ teaspoon nutmeg
• 250g dark brown sugar, packed
• 2 large eggs
• 260g (1 cup) pumpkin puree
• 125ml coconut oil (melted)
• 125ml full-fat coconut milk
• 1 ½ teaspoons vanilla extract
  
• ½ Cup slivered almonds
• 24 -28 whole walnuts (2 for each muffin)
  

1. Preheat oven to 180°C. Line a cupcake tin with paper cupcake cases. (I made 16).
2. In a large bowl, add the flour, baking soda, baking powder, salt, coconut, and spices. Mix well.
3. In the bowl of an electric mixer, add the brown sugar, the eggs, pumpkin puree, coconut oil, coconut milk and vanilla. Whisk until combined well.
4. Slowly incorporate the dry ingredients (flour etc) into the pumpkin, egg, sugar mixture. Mix until combined without overmixing.
5. Gently fold the slivered almonds into the cake batter.
6. Place cake batter into a piping bag and pipe an equal amount into each cupcake case, filling them ¾ of the way full.
7. Insert a whole walnut into each muffin. Sprinkle the top of each muffin with a little dark brown sugar.
8. Bake for 20 minutes. Test cupcakes with a toothpick or wooden skewer, and prolong cooking time for another 5 minutes or until they cooked.
9. Allow the muffins to cool for 5 minutes before removing them from the cupcake tin.
10. Transfer all muffins to a wire rack and allow to cool completely before adding frosting.

FROSTING

• 375g Icing Sugar
• 115g Butter, room temperature
• 225g Cream Cheese Philadelphia
• 200g soft Dark Brown Sugar

1. Add the Cream Cheese and butter to the bowl of an electric mixer.  Mix together until fully incorporated.
2. Add the brown sugar and mix thoroughly.
3. Set the mixer on low and add the icing sugar to the bowl.  Keep on low until the icing sugar is incorporated into the mixture and then set mixer up to medium high.  Mix until the frosting is whipped and smooth
4. Transfer buttercream frosting to a piping bag fitted with a star nozzle.
5. Pipe a small swirl on top of each muffin, and top with a whole walnut. 
6. (* I sprinkled a little dry maple sugar on top of each cupcake. )

Finalmente sono arrivate le temperature autunnali, a dire il vero, avevo già iniziato a sognare le ricetta con la zucca da tempo. Ho deciso di iniziare con dei muffin, e grazie a Mamì sono venuti alla perfezione.  Inizialmente avevo pensato di preparare muffin e, anche se il sapore era delizioso (specialmente ancora caldi dal forno), la mattina seguente mi sono sembrati un po’ noiosi, nudi e anche troppo “salutari”, quindi ho deciso di perfezionarli decorandoli con una glassa di crema al burro fatta con l’aggiunta di Philadelphia e zucchero di canna.  La combinazione era un perfetto connubio di sapori! Questa è sicuramente una ricetta da ripetere tante volte e ………….. tante volte ancora!

Ingredienti muffin

• 210 g di farina ’00’
• 1 cucchiaino di lievito (Baking Powder) – Mamì
• 1 cucchiaino di bicarbonato di sodiO
• 90g di cocco grattugiato
• ¼ di cucchiaino di sale
• 2 cucchiaini 5 spice mix (comprato QUI )
• 1 cucchiaino di cannella – Mamì
• ½ cucchiaino di noce moscata
• 250 g di zucchero di canna tipo muscovado
• 2 uova grandi
• 260g purea di zucca cotta
• 125ml di olio di cocco
• 125 ml di latte di cocco
• 1 ½ cucchiaino di estratto di vaniglia
• ½ tazza di mandorle in scaglie
• 24 -28 noci intere (2 per ciascun muffin)

*Se non trovate ‘allspice’ o i ‘5 spezie’ che ho usato, puoi sostituarlo con anice e zenzero.

1. In una grande ciotola, aggiungere la farina, il bicarbonato, il lievito, il sale, il cocco e le spezie. Mescolare bene.
2. Nella ciotola della planetaria, aggiungere lo zucchero di canna, le uova, la purea di zucca, l’olio di cocco, il latte di cocco e la vaniglia. Sbattere per almagamare bene tutti gli ingredienti.
3. Incorporare lentamente gli ingredienti secchi (farina, ecc) nella miscela di zucca, uova e zucchero. Mescolare il tutto fino a rendere il composto omogeneo.
4. Aggiungere le mandorle a scaglie, mescolando a mano nell’ impasto.
5. Trasferire l’impasto in una sac à poche e versare una quantità uguale in ogni pirottino, riempiendoli fino a ¾.
6. Inserire una noce intera in ogni muffin. Cospargere la parte superiore di ogni muffin con un po’ di zucchero di canna.
7. Cuocere per 20 – 25 minuti. Testare la cottura con uno stuzzicadenti e prolungare in caso il tempo di cottura per altri 5 minuti o fino a quando non saranno cotti.
8. Lasciare raffreddare i muffin per 5 minuti prima di rimuoverli della teglia.  Trasferire tutti i muffin su una gratella e lasciare raffreddare completamente prima di aggiungere la glassa.

Frosting

• 375g zucchero a velo
• 115 g di burro, temperatura ambiente
• 225g Cream Cheese Philadelphia
• 200g zucchero di canna scura (muscovado)
  

1. Aggiungere la Philadelphia e il burro nella ciotola della planetaria. Mescolare insieme fino al completo incorporamento.
2. Aggiungere lo zucchero di canna.Metti il mixer in basso e aggiungi lo zucchero a velo nella ciotola. Tenere basso finché lo zucchero a velo non viene incorporato nella miscela e quindi impostare il mixer fino a medio alto. Mescolare fino a quando la glassa non è omogenea e liscia.
3. Trasferire la glassa in una sac à poche con una punta a stella.
4. Decorare sopra ogni muffin con la glassa e aggiungere un altro noce.

My mother made the best Pavlova ever, and sadly I’m not 100% sure of her exact recipe.  The only other person I know who makes a Pavlova that equals hers is my Aunty Nancy!  I love to make Pavlova although I am never 100% happy with the outcome of the meringue base.  If you do get it perfect… there is no guarantee you’ll have the same success the next time – even using the exact recipe.  So, what makes a perfect Pavlova?  As far as I’m concerned, a perfect Pavlova is one where the meringue is of a good height.  There must be an outer crunchy meringue crust and the inside must be soft, light and fluffy.  While you can put whatever fruit you like on top of your Pavlova, it was traditional in our house to have strawberries, kiwi, blueberries, raspberries and passionfruit was always obligatory.  These days you can add whatever you like, for example I also like using lemon curd and mango.

I decided to ditch the recipe I was using and ask Aunty Nancy for hers – more importantly the quantities of egg whites versus sugar.  Aunty Nancy is very strict when it comes to the timing during the preparation of the meringue… and I had my kitchen timer close by to ensure I respected that.  If you find the quantities too much, I suppose you could always halve it……… although let’s be honest….. when has anybody ever had to throw away left over Pavlova!!!

There is always much contention as to the origins of this dessert.  Australia and New Zealand both argue as to who this dessert belongs to, and although I’d love to claim it as ours, it is well documented that the Pavlova indeed originates from New Zealand and was named after the Russian ballerina Anna Pavlova.  The ‘Pavlova’ is believed to have been created in honour of the dancer either during or after one of her tours to Australia and New Zealand in the 1920’s.

Although you can use whatever fruit you like, this time I decided to use a combination of fresh fruit, sugar flowers, real flowers, and macarons to add a more modern decoration.  Make sure you remove anything inedible before serving.

Pavlova

• 9 egg whites
• pinch of salt
• 500g caster sugar
• 2 teaspoons cornflour
• 1tablespoon white vinegar
• 1 teaspoon vanilla extract
• 500ml fresh cream
• 4 kiwi, peeled and thinly sliced
• strawberries, blueberries, blackberries
• peach slices
• 2 – 3 passionfruit
• Mamì sugar flowers for decoration (optional)

1. Preheat oven to 180°C.   Line a baking tray with non-stick baking paper.  Draw a 20cm circle on the paper, place on the tray, circle side down.
2. Use an electric mixer,  whisk egg whites and salt until soft peaks form.
3. Add the sugar, gently sprinkling 1 tablespoon at a time over egg whites, whisking continuously.  Once all the sugar has been added, continue to whisk on high for another 10 minutes.
4. Add the cornflour, vinegar and vanilla extract to meringue and whisk by hand or on low until just combined.
5. Use a spatula to place the meringue over the circle, smoothing the surface and sides.
6. Place Pavlova into oven and reduce the oven temperature to 120°C.  Bake for 2 hours.  – the pavlova should be dry to the touch. Turn off the oven and leave to cool completely, with the oven door slightly ajar.
7. Whip fresh cream until thick.  Spoon onto the pavlova and decorate with fresh fruit and decoration of your choice.

Pavlova

Mia madre faceva la migliore Pavlova che abbia mai provato, ma purtroppo non sono sicura di conoscere al 100% la sua ricetta. Oggi, l’unica altra persona al mondo che riesce a fare una Pavlova uguale alla sua è mia Zia Nancy! La Pavlova in sè non sarebbe difficile, però anche se ti viene perfetta una volta … non hai alcuna garanzia di avere lo stesso risultato la prossima volta – anche usando la stessa ricetta.  Quindi, cosa rende perfetta una Pavlova? Per quanto mi riguarda, una Pavlova perfetta è quella in cui la meringa è di buona statura. Ci deve essere una croccante crosta all’esterno e l’interno deve essere morbido, leggero e soffice. Anche se sopra la Pavlova si può mettere frutta a preferenza, in casa nostra era di tradizione decorare con fragole, kiwi, mirtilli, lamponi e frutto della passione. Un altro esempio diverso da quello tradizionale ma molto buona è quella con lemon curd, mango & cocco.

Ho deciso di abbandonare la ricetta che stavo usando e chiedere a Zia Nancy la sua: per me la cosa più importante era sapere la quantità di albumi contro zucchero.  Mia zia è molto severa quando si tratta della tempistica durante la preparazione della meringa … e ho avuto il mio timer da cucina nelle vicinanze per assicurarmi di rispettarlo. Se trovate eccessive le quantità, potete sempre dimezzarle, ma onestamente non ho mai buttato della Pavlova avanzata!

C’è sempre molta contesa sulle origini di questo dolce.  Australia e Nuova Zelanda discutono entrambe su di chi sia questo dessert, e anche se mi piacerebbe rivendicarlo come nostro, è ben documentato che la Pavlova proviene davvero dalla Nuova Zelanda e prende il nome dalla ballerina russa Anna Pavlova. Si ritiene che la “Pavlova” sia stata creata in onore della ballerina durante o dopo uno dei suoi tour in Australia e Nuova Zelanda negli anni ’20.

Sebbene si possa usare qualunque tipo di frutta, questa volta ho deciso di decorare con una combinazione di frutta fresca, fiori di zucchero di Mamì,  fiori veri alcuni macaron per fare una decorazione più moderna.

Ingredienti

• 9 Albumi
• pizzico di sale
• 500g di zucchero semolato extrafine
• 2 cucchiaio di maizena
• 1 cucchiaino di estratto di vaniglia
• 1 cucchiao di aceto
• 500ml panna da montare
• frutta fresca di stagione: kiwi, mirtilli, lamponi, fragole, frutta della passione….
• Per decorazione: fiori di zucchero Mamì

Metodo

1. Scaldare il forno a 180˚C.  Foderare una teglia di carta da forno e tracciarci un cerchio di 20cm servendosi di un piatto.
2. Sbattere gli albumi con la frusta elettrica e montate a neve gli albumi aggiungendo il sale.
3. Aumentare la velocità e continuare a sbattere, aggiungendo lo zucchero alle albume un cucchiaio alla volta, finché gli ingredienti non saranno tutti amalgamati.  Dopo che avete aggiunto tutto lo zucchero, continuare per un altra 10 minuti con la frusta elettrica in alta velocità.
4. Il composto deve essere denso e lucido. Assicurarsi che lo zucchero sia completamente sciolto e continuare a lavorare fino a che il tutto si presenta completamente liscio e senza granuli.
5. Aggiungere l’estratto di vaniglia al composto ed infine incorporarvi delicatamente la maizena e l’aceto.
6. Versare il composto di meringa nel cerchio tracciato in precedenza e, servendosi di un cucchiaio, spargerlo sino ai bordi e sagomarla dando attenzione di non schiacciarla.
7. Infornate la meringa, e subito abbassare il termostato del forno a 120°C,  e lasciatela cuocere per circa 2 ore in forno statico.
8. Spegnere il forno e far raffreddare completamente la meringa nel forno con lo sportello leggermente accostato.
9. Montare la panna e ponetela sulla superficie della meringa.
10. Decorate con i fiori di Mamì,  la frutta tagliata, i mirtilli e i lamponi ecc, ed infine cospargete con la polpa di tre frutti della passione.

Per la decorazione qui, ho utilizzato una combinazione di fiori di zucchero, fiori veri, macaron e frutta.

Attenzione:  Togliere tutto ciò che non è commestibile prima di servire. 

Lemon Cake is one of those recipes that I remember fondly from my mother’s classic cake repertoire that she’d have waiting for us after school for our afternoon tea. The lemon glaze on the bottom of the cake balances the tart lemon icing on top.  This recipe will actually make two cakes.  The bundt tin I used is a 6 cup capacity  Nordic Ware cake tin, but you could make two loaf cakes if you prefer.  If you don’t have buttermilk, substitute it by adding 3/4 tablespoon of white vinegar to your milk. I think that this cake is actually better the day after it is baked.

While lemon icing is the classic frosting for this cake, I also used my passionfruit curd which pairs perfectly –  actually one might even say it’s a marriage made in heaven!

Lemon Cake

Ingredients

• 230g butter
• 400g sugar
• 380g plain flour
• 4 large eggs
• 50ml lemon juice
• 1/3 cup lemon zest (30g)
• 1/2 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1 teaspoon salt
• 175 buttermilk
• 1 teaspoon vanilla Extract

lemon glaze

• 100g sugar
• 125ml lemon juice

lemon icing

• 240g (2 cups) icing sugar
• Juice of a lemon + finely grated zest

Method

1. Preheat oven to 180°C.
2. Beat together the butter and sugar using an electric mixer until light and fluffy, about 5 minutes.
3. Add the eggs, one at a time and beat well after each addition
4. For the lemon zest, use a potato peeler to gently peel 2 medium lemons. Add the peel to a mini food processor, and it should be about 1/3 cup.  (Add 1 tablespoon of sugar which helps it grate finely).  Add the lemon zest the butter, sugar & eggs.
5. Sift together the flour, baking powder, baking soda and salt into a bowl.
6. In another bowl, combine the lemon juice, buttermilk and vanilla.
7. Add flour and buttermilk mixtures to the cake batter.
8. Divide batter evenly between two loaf tins or cake pans, smoothing the tops.
9. Bake for 45 minutes 1 hour, until an inserted skewer comes out clean. (mine were ready in 45min)
10. Allow the cakes to cool for 10 minutes.
11. Meanwhile prepare the lemon glaze.  Combine the granulated sugar and lemon juice in a small saucepan, cooking over low heat until the sugar dissolves, and it reduces a little.
12. Remove cakes from pans and set on wire rack over a plate or pan.   I returned my cakes to the bundt tin to apply the glaze to the base of the cake so as to not damage the pattern on the top of the cake from the tin…. I allowed the glaze/syrup to soak in for about 10 minutes and then turned cakes out to cool completely on a wire cake rack.
13. Brush some extra glaze on top of cakes, and allow cakes to cool completely.
14. Mix sifted icing sugar with lemon juice and lemon zest. and pour over cake.  If you want your icing thicker, just add extra icing sugar until you are happy with the consistency.

Torta di Limone

La torta al limone è una di quelle ricette che ricordo con affetto dal classico repertorio di dolci di mia madre che ci cucinava dopo la scuola per la nostra merenda. Il sciroppo di limone che resta sul fondo della torta bilancia la glassa di limone in cima.  Le dosi di questa ricetta in realtà basteranno per due torte. Il stampo Nordic Ware che ho usato ha una capacità di circa 1300ml, e poi per l’impasto rimanente ho usato una teglia di circa 20cm in diametro. 

*Se non hai il latticello, sostituiscilo aggiungendo 3/4 cucchiai di aceto bianco al tuo latte.

Mentre la glassa al limone è la glassa classica per questa torta, ho anche usato la mia passionfruit curd che si accoppia perfettamente – in realtà si potrebbe anche dire che è un matrimonio fatto in paradiso!

ingredienti

• 230 g di burro
• 400 g di zucchero
• 380 g di farina ’00’
• 4 uova grandi
• 50ml Succo di limone
• 30g di scorza di limone
• 1/2 cucchiaino di lievito in polvere
• 1/2 cucchiaino di bicarbonato di sodio
• 1 cucchiaino di sale
• 175 latticello
• 1 cucchiaino di estratto di vaniglia

sciroppo di limone

• 100g zucchero
• 125ml succo di limone

glassa di limone

• 240g zucchero a velo
• succo + scorza di 1 limone

Metodo

1. Preriscaldare il forno a 180°C.
2. Con l’aiuto di una planetaria, sbattere insieme lo zucchero e il burro fino a quando non è omogeneo e pallido, circa 5 minuti.
3. Aggiungere le uova, una alla volta e sbattere bene dopo ogni aggiunta
4. Per la scorza di limone, utilizzare un pelapatate per sbucciare delicatamente 2 limoni medi. Aggiungi la buccia a un mini robot da cucina. (Aggiungere 1 cucchiaio di zucchero che aiuta a grattugiarla finemente).  Aggiungere la scorza di limone al burro, zucchero e uova.
5. Setacciare la farina, il lievito, il bicarbonato e il sale in una ciotola.
6. In un’altra ciotola, unire il succo di limone, il latticello e la vaniglia.
7. Aggiungere le miscele di farina e latticello alla miscela di uova, zucchero e uova, mescolare bene per ottenere un impasto liscio e omogeneo.
8. Dividere l’impasto in modo uniforme tra due teglie precedentemente imburrate e infarinate.
9. Cuocere per 45 minuti – 1 ora, finché un spiedino inserito non esce pulito. (i miei erano pronti in 45 minuti)
   Lasciare raffreddare le torte per 10 minuti.
10. Nel frattempo preparare il sciroppo di limone. Unire lo zucchero semolato e il succo di limone in una piccola pentola, cuocere a fuoco basso finché lo zucchero non si scioglie e si riduce un pochino.
11. Togliere le torte dalle stampi e metterle su una griglia sopra un piatto. Ho riposto le mie torte nele teglie per applicare il sciroppo alla base della torta in modo da non danneggiare la parte superiore della torta. Ho permesso che la glassa / sciroppo si impregnasse per circa 10 minuti e poi ho sformato le torte per raffreddare completamente su una griglia.
12. Spennellare il sciroppo anche sopra le torte e lasciare che le torte si raffreddino completamente.
13. Per la glassa, mescolare lo zucchero a velo setacciato con il succo di limone e scorza di limone. Versarla sopra la torta. Se vuoi la tua glassa più densa, aggiungi dello zucchero a velo in più fino a quando non sei soddisfatto della consistenza.
