Chinese Fried Rice

 

My mother used to cook wonderful Chinese dishes when we were growing up.  She had attended lessons with Elizabeth Chong,  a prominent Chinese-born Melbourne based celebrity chef, author and television presenter, at her Chinese Cooking School.  If there is one memory I have of when my mother used to cook Chinese, it was that she seemed to spend many hours chopping everything with surgical precision – the preparation seemed to take hours.  While this may just be a distorted memory, one memory that is very clear is how delicious those recipes were.  So while we had a strong Italian culinary influence growing up, thanks to my wonderful mother’s skill and creativity we were often spoilt with wonderful recipes from around the world. 

This Fried Rice recipe is very easy, and I think (hope) it comes close to what she would make for us. 

Chinese Fried Rice

  • 4 free-range eggs
  • ⅓ cup vegetable oil
  • 1 small red onion, finely diced
  • 1 teaspoon finely chopped ginger
  • 1 teaspoon finely chopped garlic
  • 2  bacon rashers, or cubed pancetta
  • 2 tablespoons Shao Xing rice wine
  • 4 cups steamed rice
  • ⅔ cup finely sliced spring onions
  • 2 tablespoons soy sauce
  • ¼ tsp sesame oil
  • 1 cup cooked peas
  • 50g green beans, chopped
  1. Break eggs into a bowl and beat lightly. Heat half the oil in a hot wok or large frying pan. Pour beaten eggs into the frying pan and leave to cook like a pancake. Flip over and cook quickly on other side.  Carefully remove and set aside to cool.  Roll up and slice, chopping strips roughly.
  2. Blanch beans by boiling the green beans for about two minutes, then putting them in ice water immediately after (until completely cooled).
  3. Heat remaining oil in the hot pan and stir fry onion, ginger, garlic and bacon for one minute. Pour in rice wine and stir fry for one minute.
  4. Add rice to the pan with spring onions, soy sauce, sesame oil, green beans and reserved egg and stir fry for two minutes or until well combined and rice is completely heated through.

 

Riso alla Cantonese

Mia madre cucinava piatti cinesi meravigliosi.  Aveva frequentato le lezioni di Elizabeth Chong, una famosa chef di origine cinese nata a Melbourne.  Elizabeth Chong era una ‘Celebrity Chef’ in televisione prima che questo titolo diventasse una ‘moda’.  Era anche un autrice di libri di cucina e aveva la sua scuola di cucina cinese.  Se c’è un ricordo che ho di quando mia madre preparava i piatti cinesi, è che sembrava passare molte ore a tagliare tutti gli ingredienti con una precisione chirurgica.  La preparazione sembrava di richiedere delle ore.  Forse sarà un ricordo confuso, ma ricordo bene che quelle ricette cinesi erano molto buone.  Così, anche se abbiamo avuto crescendo una forte influenza culinaria italiana, grazie alla meravigliosa abilità di mia madre ed alla sua creatività,  siamo stati spesso viziati con ricette spettacolari da tutto il mondo. 

Questa ricetta di riso fritto è molto facile, e penso (spero) si avvicini a quello che lei avrebbe fatto per noi.

  • 4 uova
  • ⅓ Cup olio di semi
  • 1 piccola cipolla rossa, finemente tagliata
  • 1 cucchiaino di zenzero tritato finemente
  • 1 cucchiaino di aglio tritato finemente
  • 160g pancetta tagliato in dadini
  • 2 cucchiai di vino di riso Shao Xing
  • 4 tazze di riso cotto a vapore
  • 2 scalogni, tagliati
  • 2 cucchiai di salsa di soia
  • ¼ cucchiaino di olio di sesamo
  • 1 tazza di piselli cotti
  • 50g fagiolini, tagliati
  1. Rompere le uova in una ciotola e battere leggermente. Scaldare metà dell’olio in un wok caldo o in una padella grande.
  2. Versare le uova sbattute nella padella e lasciare cuocere come una frittella. Capovolgere e cuocere rapidamente sull’altro lato.  Rimuovere con cautela e mettere da parte per raffreddare.  Arrotolare e affettare, tritare le strisce grossolanamente.
  3. Bollire i fagiolini per circa due minuti, poi metterli in acqua ghiacciata subito dopo (fino al completo raffreddamento).
  4. Scaldare l’olio rimanente nella padella calda e mescolare cipolla fritta, zenzero, aglio e pancetta per un minuto.
  5. Versare il vino di riso e soffriggere per un minuto.
  6. Aggiunga il riso cotto a vapore con le scalogne, la salsa di soia, l’olio di sesamo, i fagiolini e l’uovo riservato e saltare tutto per due minuti o fino a che il riso e completamente riscaldato.
