Sicilian Almond Biscuits

These traditional Sicilian almond biscuits (cookies) are delicious, gluten free and easy to make. This recipe also yields many so be prepared to fill your cookie jar! I flattened mine a bit using a fork, but traditionally they are pinched using three fingers. You may also find these with slivered almonds on top and if you do want to do that, just roll the raw cookie balls in the slivered almonds prior to baking.

Biscotti alle Mandorle

  • 600g almond flour
  • 400g Caster sugar
  • 100g honey
  • 90g egg white
  • 1 egg
  • 2 tablespoons almond paste
  • Icing sugar
  1. Mix together the sugar and almond flour
  2. Add the honey, almond paste, egg whites and egg. Mix the ingredients together with an electric mixer until a soft but compact dough is obtained.
  3. Transfer the dough into a bowl, lightly wet your hands and make small balls. Roll each ball in a bowl of icing sugar until it is completely covered.
  4. Place the sugar coated balls on a baking tray lined with baking paper and using a fork, lightly crush them. You can also pinch the top using three fingers, (which is the traditional way to make them.) Make sure there is sufficient space between each one.
  5. Bake the biscuits at 190°C for about 10 – 12 minutes, until they are lightly golden. Let them cool on a grill.

Biscotti Siciliani alle Mandorle

Ingredienti

  • 600g farina di mandorla
  • 400g Zucchero semolato
  • 100g miele
  • 90g albume
  • 1 uovo
  • 2 cucchiai (30ml) pasta di mandorla
  • Zucchero a velo q.b.

Ingredienti

  1. Mescolare insieme farina di mandorle e zucchero.
  2. Aggiungere al composto la pasta di mandorle, il miele, albumi ed uovo. Utilizzare il mixer per lavorare il composto fino ad ottenere un impasto morbido ma compatto.
  3. Disponete l’impasto in una ciotola, quindi formate delle palline avendo l’accortezza di mantenere le mani leggermente bagnate. Ricoprire ogni pallina con lo zucchero a velo.
  4. Disporre le palline ricoperte di zucchero su una leccarda da forno che avrete prima foderato con carta da forno, e poi schiacciatele leggermente utilizzando una forchetta.  Potete anche pizzicate la sommità stringendola tra le tre dita.
  5. Cuocere i biscotti a 190°C per circa 10 – 12 minuti, fino a che non saranno leggermente dorati. Lasciateli raffredare su una griglia.
